While I don't consider myself any kind of authority in the cooking world, I have been pretty pleased with this little make-shift fried rice recipe that I've thrown together in the past. I thought I would share it with you so that next time you've got 10 minutes and want to whip up something easy, delicious, AND nutritious, you can follow this recipe for my "Feel Good Chicken Fried Rice." (Named, simply, because it makes you feel good!)
Ingredients:
Chicken breast--I usually use breast tenders, about 4-6 of them
Terriyaki marinade--2 tbsp
EVO
Salt & pepper
Crushed red pepper flakes
Frozen veggies--your choice, about 1-2 cups
Minute Rice (brown)-- 1 cup
1 egg
Soy sauce (low sodium if you have it)
Marinate your chicken in terriyaki marinade. (I usually pre-cut the chicken and put it in a plastic baggy with the marinade before I go to work, then it has all day to soak in the flavor and it is easy to pop it in the pan and cook in minutes when I get home!)
Cook the brown rice as indicated on the package. (1 cup of rice + 1 cup of water= 2 servings).While the rice is cooking...
Heat up a small pan AND a large pan with some extra virgin olive oil, salt & pepper, and crushed red pepper flakes.
In the small pan, add your marinated chicken. Stir frequently to make sure the chicken gets cooked all the way through.
In the larger pan, add your frozen vegetables. My personal favorites are green beans, crinkle cut carrots and lima beans. Season with additional salt & pepper and crushed red pepper (I always say the spicier the better! Get that metabolism going!) and stir frequently to evenly cook the veggies.
Once the veggies are mostly cooked, scoot them over to one half of the pan, and crack your egg in the other half. Shut the heat off. Let the egg fry and chop it into little pieces.
Add the cooked chicken to the vegetable/egg pan and mix ingredients together.
Next, add the brown rice to the same pan and mix thoroughly.
Drizzle soy sauce to taste. (Be careful not to go overboard... you can add more, but can't take it away. You would be surprised how flavorful a small amount can be.)
Makes 2 servings
Additional tip: Eat one serving (half of the fried rice) for dinner and stick the rest in the fridge for a quick lunch the next day! Just heat it up and you're ready to eat!
